One of my favorite recipes is from my mother in law's kitchen; chocolate zucchini bars with chocolate cream cheese frosting. The first time I tried them I think I ate half the pan. Today, you are all lucky enough to be on the receiving end of this recipe.
Chocolate Zucchini Bars
1/2 cup oil
2 cups sugar
2 cups flour
2 teaspoons cinnamon
2 teaspoons baking soda
1 teaspoon salt
1 1/4 cup + 2 tablespoons cocoa
3 cups grated zucchini
Beat eggs, oil, and sugar for two minutes. Add dry ingredients all at once and mix well by hand until smooth. Stir in vanilla and zucchini.
Pour into greased jelly roll pan. Bake at 350 degrees for 25-30 minutes.
Then, after the whole pan of goodness is cool, frost with chocolate cream cheese frosting.
3 ounces cream cheese, softened
1/2 cup butter, softened
4 tablespoons cocoa
2 cups powdered sugar
1 teaspoon vanilla
Combine all ingredients. Beat until smooth. Keep refrigerated.
