Crockpot Chicken + Dumpling Stew

I don't know what the weather is like in your neck of the woods, but over here in Wisconsin it has been grey for days on end, the perfect kind of weather for stew, soup, or chili. Anything to warm you right through to the soul. {Actually, as I'm writing this we are getting our first snowfall.}

Yesterday's blustery afternoon was no exception. I dumped a handful of ingredients into the crockpot while we laid around relaxing all afternoon long {it was wonderful}. A couple hours into the whole deal the house smelled divine. When it came time to eat up it tasted just as good as it smelled!

{This recipe is being added to the winter meal rotation. Can't wait to make it a 2nd, 3rd, 4th, and 5th time.}

Crockpot Chicken + Dumpling Stew

2-3 boneless skinless chicken breast {I used a lb. of chicken tenderloins}
1 bag frozen veggies for soup
1 can cream of chicken
1 can chicken broth
1/4 cup water
1/4 cup milk
1 chicken bouillon cube
1/2 teaspoon tyme
1/2 teaspoon rosemary
salt and pepper to taste

1/2 cup flour
1/4 cup cornmeal
1/2 teaspoon baking powder
1 egg white
1 tablespoon milk
1 tablespoon vegetable oil
1/4 teaspoon salt

In crockpot combine chicken, frozen veggies, cream of chicken, broth, water, milk, boullion cube, and seasonings. 

Cover and cook on low for 7-8 hours or on high for 3-4 hours.
Note: If the stew is too thin after it has cooked for the proper amount of time, liquify a tablespoon of flour by adding hot water. Stir into the stew and let it cook for a couple of minutes. This should help thicken it right up. 

Meanwhile, mix dumpling ingredients together and drop onto stew in 7-8 spoonfuls. Cover and cook an additional 20-25 minutes, until toothpick inserted comes out clean.
