Friday's Letters {with a recipe}

Pin It Now!

Dear Browned Butter Salted Chocolate Chip Cookies, I kind of like you. So much so that I've made two batches just this week. I'm sorry I'm not sorry. Dear Grace and Lace Giveaway, just two more days till I pick a winner! I hope everyone had a chance to enter, if not go here. Dear Teressa Mackey {aka Newborn Mama}, I'm so excited you are my newest Featured Sponsor. I'm even more excited to kick off your giveaway this Sunday. I know my readers will love you just as much as I do. Dear Last Minute Surprise Visit from Grandpa, I'm such a planning dork that your visit this weekend has me freaking out a little bit. I am choosing to embrace the time we have together with a good attitude. And FYI, we totally vacuumed both cars and swept the garage just for your arrival. {} Dear Mr., it was the cutest thing seeing you vacuum the living room with a dusting rag tucked into your back pocket. You are such an amazing hubby. I hope you know I understand I am beyond blessed to have a man who helps around the house. Dear Weekend, you are full. With our first of many Christmas parties starting tonight, a Christmas tree farm adventure tomorrow, a birthday to celebrate, and a baby shower. It will be good. Dear God, I trust You with my life, my heart, and my family. It's a good reminder to myself mainly, that You are in control. You always will be. I can find comfort in that truth.

Browned Butter Salted Chocolate Chip Cookies

2 sticks butter
2 1/2 cups flour
1 teaspoon baking powder
1 teaspoon coarse salt, plus more for tops of cookies
1 cup packed brown sugar
3/4 cup sugar
2 eggs
1 tablespoon vanilla
1 1/2 cups chocolate chips

Place butter in medium saucepan. Heat over medium heat, stirring frequently. Once butter melts and begins to foam, continue to cook until brown specks start to form on the bottom of the pan. Butter will have a nutty aroma. Remove from heat and transfer to a glass bowl and cool to room temperature.

{Side note, if you have never browned butter I'm not sure if you've ever lived. Just kidding. But seriously. Please try it. You'll never go back. We especially love it over our freshly steamed green beans, thanks to a friend's recommendation. And of course we love it in our chocolate chip cookies!}

Preheat oven to 350 degrees.

Whisk together flour, baking powder, and salt. Set aside.

Using an electric mixer, beat butter, brown sugar, and sugar. It will appear crumbly. Add eggs, one at a time, mixing well after each addition. Mix in vanilla. The dough will be creamy at this point.

Gradually add in flour mixture, mixing until almost combined. Stir in chocolate.

Measure dough by tablespoonfuls, roll into a ball, and place on baking sheet. Slightly flatten the surface of the dough ball with the palm of your hand.
Sprinkle with course salt.
{this is very important and of course delicious}

Bake 10-12 minutes, or just until they start turning light golden in color. Do not over bake.
Transfer immediately to wire racks to cool.

Note: I cut this recipe in half. I also had to adjust the temperature of the oven to 325 degrees, baking them 12-14 minutes.
