The Perfect Lemon Poppy Seed Muffin

This past weekend I had an exceptional amount of time on my hands. Two words. Deer. Hunting. 

I made the best of my solidarity by baking, painting my nails, and watching not one, but two chick flicks. How much do you love the movies While You Were Sleeping and Serendipity

I ended up hitting the jackpot by finding a recipe for Lemon Poppy Seed Muffins that I quote, "are the best lemon poppyseed muffins I've ever had" and "these are my favorite muffins, honest". Thank you Mom and Bree for being my taste testers.

I'm not chalking it up to my baking skills, although they are quite phenomenal. It's a secret ingredient and a special method that makes these muffins so special. 



 Lemon Poppy Seed Muffins

2/3 cup sugar
 grated zest and juice of 1 lemon
2 cups flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup sour cream {secret ingredient}
2 eggs
1 teaspoon vanilla
1/2 cup butter, melted and cooled
2 tablespoons poppy seeds

Preheat oven to 400 degrees. Grease or line muffin pan. 

In a large bowl, rub the sugar and lemon zest together with your fingertips until the sugar is moist and the fragrance of lemon is strong {secret method}. Whisk in the flour, baking powder, baking soda, and salt. 

In a large glass measuring cup, whisk the sour cream, eggs, vanilla, lemon juice, and melted butter until blended. Pour the liquid ingredients over the dry ingredients and, with the whisk or spatula gently, but quickly stir just until blended. Stir in the poppy seeds. 

Divide batter evenly among muffin cups. Bake for 20 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean.

The original recipe calls for an icing, but I was fresh out of lemon juice to make said icing. If you want to try them with the icing here's the recipe. 

Icing

1 cup confectioners' sugar, sifted
2-3 tablespoons fresh lemon juice

  4. I adore the movie, While You Were Sleeping. It's so cute and with Christmas coming up, I can't wait to see it again. :) The lemon poppy seed muffins sound delicious!

    Quick question: I have allergies to most types of seeds. Do you think the muffins would be just as good without the poppy seeds? Would that even work?
