{Easy} Chicken Fajtas

Need a dinner idea for tonight? Good. Good. I have one for you! 
Get ready to make the easiest version of chicken fajitas. And, just because you probably wanted to know this piece of useless information, we pronounce fajitas fa-gee-ters in our house. So when you make these I hope you call them fageeters too! 

This recipe is so rediculously easy, yummy, and healthy {always a plus}. Another plus? You just might have everything you need right in your fridge and pantry.

Easy Chicken Fajitas

chicken, sliced lengthwise
lime juice
3 tablespoons olive oil
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/2 teaspoon garlic salt
salt and pepper to taste
green peppers, sliced lengthwise
 red onion, sliced in half, then lengthwise
mushrooms, sliced

Cover the bottom of a glass baking dish with lime juice. Add olive oil, cumin, chili powder, and garlic salt. Stir with a fork. Add sliced chicken and let sit for 10 minutes. 

Meanwhile prep your veggies. We generally stick with the tried and true red onion, mushroom, and green pepper trio. Once they are sliced add them to a skillet with a drizzle of olive oil and a pinch of salt and pepper. 

In another skillet add the marinaded chicken. Cook until no longer pink. Add cooked chicken to the skillet of veggies. Once the veggies are just about tender remove from heat.

Serve with tortillas, shredded cheese, and sour cream. 


The Mr. and I just gobbled these delicious fajitas up for a very late lunch. I'm already anxiously awaiting leftovers tomorrow.
